Arroz con Vegetales

We definitely have plenty of rice and vegetables in Costa Rica.  “Arroz con pollo” (Chicken with rice) is very popular here.  I make a vegetarian version using vegetables from the Feria de Agricultor (Farmer’s Market).


Olive oil

1 medium onion (finely chopped)

4 cloves chopped garlic

3 carrots (peeled and chopped)

~1 kg green beans (ends trimmed, chopped)

2 cups white rice

4 cups water

2 packets Sazonador Mi Arroz (or you may substitute your favorite boullion)

pepper and ground cumin to taste


1)  In a large frying pan, heat the oil.  Add the onion and garlic and sauté until translucent and aromatic, about 3-5 minutes.

2)  Add the carrots and green beans and cook for another 5 minutes, until softened.

3)  Add the rice and cook for another 5 minutes until slightly browned.

4)  Stir in the water, Sazonador Mi Arroz, pepper, and cumin.  Cover and simmer for about 10 minutes until the liquid is absorbed, stirring frequently. (NOTE:  Sometimes I add a tablespoon achiote, a popular condiment in Costa Rica, in this step.  It gives the rice a bright red color and a slightly sweet flavor.)

Using this recipe, our family of 4 ate this dinner for 2 nights.  Provecho!
